When I can't deal, I bake.

I had a rough day. One of those days where you feel like you got run over by a truck, then the truck backed up and ran over you again just to make sure you stayed down. So instead of coming home and kicking the dog (who totally asks for it), I bake. I bought a jar of Peachy Peach Halves on Sunday at the Keller Farmers Market from a local company called Lucidio's Produce & Herbs. I knew I had to get them and make them into something delicious. I loved that they only had natural ingredients as well.


You may or may not know that I went to culinary school at Western Culinary Institute in Portland, OR. I have a Le Cordon Bleu Culinary Arts Degree. With this knowledge in hand you would think that I would walk into the kitchen and toss some things in a pan, throw it into the oven and pull out an amazing delectable delight. While I am fully capable of doing this, I unfortunately found throughout the years that I do not have a knack for culinary creativity or originality. I have come to terms with this and have embraced that I am an amazing recipe follower.

With my lack of creativity I needed something to do with this jar of Peachy Peach Halves. So I turn to someone that I hold in very high regard; someone who loves whole milk, real food and butter as much as I do; Paula Deen. She is def a woman after my own heart. If my heart were twice its natural size and ready to explode.

Her recipe for Peach Cobbler was perfect for my precious Peachy Peach Halves. So with my bad day and my clean dishes from my new dishwasher I set out to make peach cobbler for the first time. Since it's just J, B and I at home, I didn't want to have a ton of cobbler at the house because I would totally eat it...all...by myself. So I decided to make it in a 9x9 pan and 3 small ramekins. I decided that I will bring the 9x9 pan to work tomorrow and let my coworkers fight over it.

They turned out amazing! They are beautiful! I ate one of the little ones and the batter turned out fluffy and light but still sweet and buttery. It was tangy from the peaches because they were still so fresh. It was actually refreshing to eat. I am actually glad I didn't have any heavy cream to make whipped cream because it would have been almost too much. It was just right. So enjoy drooling over these pictures and let me know if there is a recipe that you have tried lately that made you happy after a bad day.
